Cheesy Roasted Veggie Toast

Crispy toast topped with roasted vegetables, melted cheese, and herbs – a healthy and satisfying treat!


🥗 Ingredients:

  • 4 slices whole wheat or sourdough bread

  • 1 cup cherry tomatoes, halved

  • 1/2 cup red bell pepper, diced

  • 1/2 cup zucchini, diced

  • 1/4 cup red onion, finely chopped

  • 2 tablespoons olive oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon dried oregano or Italian seasoning

  • 1 cup shredded mozzarella or cheddar cheese

  • Fresh basil or parsley for garnish (optional)


🔥 Instructions:

1. Preheat & Prep Veggies

Preheat oven to 200°C (400°F).
In a bowl, mix cherry tomatoes, bell pepper, zucchini, and onion with olive oil, salt, pepper, and oregano.

2. Roast the Veggies

Spread the veggies on a baking tray lined with parchment paper.
Roast in the oven for 15–18 minutes, until slightly caramelized and soft.

3. Toast the Bread

Lightly toast the bread slices in a toaster or oven for 3–5 minutes until slightly crisp.

4. Assemble & Bake

Place the toasted bread on a baking tray.
Top each slice with a spoonful of roasted veggies and sprinkle cheese generously.
Bake again at 180°C (350°F) for 5–7 minutes, or until the cheese is melted and bubbly.

5. Garnish & Serve

Garnish with chopped fresh basil or parsley.
Serve hot as an appetizer, snack, or a light meal.
